Pumpkin seeds are the seeds of the Cucurbitaceae plant pumpkin. It is widely grown throughout our country. The dried and mature seeds are flat oval, slightly pointed at one end, yellowish-white in appearance, slightly edged, about 1.2 to 2 cm long and 0.7 to 1.2 cm wide, with hairy surfaces and more edges. The seed coat is thick, and the hilum is at the tip end; if the seed coat is removed, a green and thin endosperm can be seen, with two yellow thick cotyledons inside. The cotyledon contains fatty oil and the radicle is small.
